blessed with lush natural assets capable of growing great food. Over the past
three years we’ve driven down a few country lanes to put the results of

cutter, she supplies top quality meats including rare breed at prices
to shame supermarkets, so supporting a network of smaller surrounding

We have many farmers growing for us at isinglass.
They continue to amaze and delight us with the quality and variety of fruit
and vegetables they produce, for example when did you last see a custard
white petty pan or a kabbocha pumpkin in your supermarket, very unlikely.
So to these farmers who grow us the foods of by-gone times we thank you
so very much. |

and Old Gloucester spot pigs for us. The best meat we’ve certainly
tried. Sells on to Peter Gott and that TV pig man too when not keeping a
show farm and potato merchant business. |

HERITAGE & UNUSUAL VEGETABLES |

Alan tends the gardens of Hales’s rich list when not growing us veg on his ‘patch’, the Bothy of Dunham Massey Estate. Kale, ruby chard, purple sprouting and romanesco broccoli and hardy spinach are cropped before lunch and on Isinglass’s plates that evening. When we opened Isinglass over 3 years ago we were amazed at the sight of lush fields laying empty around post-industrial Manchester while veg is flown in tourist class. So we’ve teamed up with Alan to revive delicious heritage veg last eaten by Victorians. That’s something new for vegans! |

Ex-cheesemaker from a family line of cheesemakers in a town crammed with the counties best cheesemakers. Adrian met his wife and other half of the company elbow deep in curd. Adrian puts his encyclopaedic, enthusiastic knowledge of his trade to our benefit to source products like day-old goat curd or beetroot-tinged smoked salmon, many from the farming friends he grew up with in the lush Longridge countryside. |
